The Peach Truck’s Famous Peach Recipes

Fresh, juicy peaches are on their way to select Rural King stores this summer! The Peach Truck is traveling around to farm stores to sell their delicious peaches by the case. To celebrate, The Peach Truck has provided us with a variety of peach recipes for desserts, breakfasts, dinners, salads, and more. And, check the schedule to see when The Peach Truck will be visiting a town near you!

The family truly cares about quality when it comes to their fruit, and I have only heard great things from people who have purchased peaches from the truck. I can’t wait to grab a bag when they swing into town.

Peach Recipes

NO-BAKE FRESH PEACH PIENo-Bake Fresh Peach Pie

Ingredients:

  • 1 10-inch prepared graham cracker pie crust
  • 1 3-ounce package peach-flavored gelatin
  • ¼ cup granulated sugar
  • zest of one lemon
  • 1 cup boiling water
  • 7 peaches
  • whipped cream, optional

Directions:

  1. In a small mixing bowl, add the peach-flavored gelatin, sugar, and lemon zest. Add boiling water and stir until sugar and gelatin are dissolved. Set mixture aside to cool to room temperature.
  2. While the gelatin is cooling, prepare your peaches. Start by peeling the peaches. Bring a medium saucepan of water to a boil and prepare a bowl of ice water. Using the tip of a paring knife, make a small X through the skin on the bottom of the peach, taking care to not cut deep into the flesh. Using a slotted spoon, place the peach in the boiling water for 10-15 seconds before transferring it to the bowl of ice water. Once cool. the skin will easily peel away with a paring knife. Just start at the corners of the X and peel towards the stem.
  3. Once the peaches are peeled, remove the pit, cut into thin slices, and place in a large mixing bowl. Pour the cooled gelatin mixture on the peaches, toss to combine fully and transfer to the prepared pie crust. Arrange the peaches to evenly fill the crust. Cover with plastic wrap and refrigerate for 2-3 hours until fully set.
  4. Slice with a sharp knife dipped in hot water, and serve with a dollop of whipped cream.

ROAST PORK LOIN WITH PEACH “PAN JAM”

Roast Pork Loin with Peach “Pan Jam”

Serves 6-8

Ingredients:

  • 3-4 pound pork loin (not tenderloin)
  • ½ cup brown sugar, divided
  • 1 tablespoon sea salt
  • 1 tablespoon freshly-ground black pepper
  • 1 teaspoon powdered ginger
  • 6 fresh peaches, peeled, pitted and sliced
  • juice of half a lemon

Directions:

  1. Preheat your oven to 425º F. In a small bowl, mix 1 Tbsp of brown sugar with salt, pepper, and ginger until combined. Toss remaining brown sugar in a separate bowl with the sliced, peeled peaches and lemon juice. Set aside.
  2. Rinse the pork loin and pat dry with paper towels. Coat all sides with the seasoning blend. Place a large iron skillet on midium-high heat. Once hot, place pork loin, fat-side down, to sear and brown. Let sit for 2-4 minutes before turning to brown all four sides. Remove skillet from heat and transfer peaches to the pan, arranging on either side of the pork loin.
  3. Place the pan in the center rack of the oven and cook until internal temperature reaches 160º F (about 45 minutes). Remove from the over and transfer the pork to a cutting board to rest.
  4. Reduce the oven to 350º F. Using a wooden spoon, stir together the peaches and pork drippings in the pan and return to the oven for 10 minutes. Once rested, slice the pork loin and return to the pan with the peaches to serve.

FROZEN LEMONADE PEACH POPSFrozen Lemonade Peach Pops

Ingredients:

  • 2 cups peeled, pitted and finely-diced peaches
  • ⅓ cup fresh lemon juice (about 2-3 lemons)
  • ¼ cup granulated sugar

Directions:

  1. Vigorously mix all ingredients together with a whisk until combined. This process will not only help dissolve the sugar, but also break up the peaches so they won’t float to the top.
  2. Pour the mixture into your freezer pop molds and freeze over night.
